Wine School: five tempting workshops for the spring season

For the months of April and May, the Wine School of Avignon has concocted five tasting workshops that are both gourmet and refined. The more reasonable among us will choose one, while the more adventurous will be tempted by several!

Original Food and Wine Pairings for April

For this first workshop of April, we're starting off strong by pairing Côtes du Rhône Crus with vegetarian dishes! Indeed, subtle and surprising pairings exist between these two worlds. Whites from Cairanne and Condrieu, rosés from Vacqueyras, and reds from Saint-Joseph and Côte-Rôtie enhance delicious dishes like fennel tartare with avocado cream or a Parmesan/truffle shortbread with raw and cooked asparagus. We know, our mouths are already watering... And yet, this is just a glimpse!

For the second and final workshop in April, we're continuing on the path of gourmet delights with a dish that's very different from vegetarian dishes, but just as appetizing: chocolate! Of course, with Easter just around the corner, we couldn't pass it up. During this two-hour workshop, we experiment with the delicate art of wine and chocolate pairing. To do so, we savor several ranges from Avignon chocolatier Aline Géhant with different wine profiles. A perfect pairing our taste buds will long remember!

A subtle blend of technique and pleasure in May

The opening workshop in May is devoted to tasting barrel-aged Rhône Valley AOC wines. The aim? Understand how barrel ageing influences the wine's notes and aromas. In just two hours, from a sensory perspective, we learn how to recognize a wine that has spent some time in barrel. And there are many ways to age wine in barrels, so there's plenty to learn!

Wouldn't a return to basics be welcome for this second May workshop? We'll happily (re)discover tasting techniques for nearly two hours. Through sight and smell, without forgetting taste, of course, we'll learn how to taste a wine properly. An ideal opportunity to educate your senses and train your palate to recognize different aromas so that, who knows, you can shine with your loved ones at your next tasting!

We dare say the best is yet to come, since this last workshop of May is all about summer truffles! This 100% terroir tasting focuses on the finesse of truffles and the authenticity of Côtes du Rhône wines, for a deliciously successful pairing. Over the course of the two-hour tasting, the summer truffle is revisited in a variety of dishes and enhanced by the subtle accompaniment of the varied profiles of Côtes du Rhône wines. It's on this excellent note that you'll have to wait to discover the next workshops in June!
